March


On Monday, we awoke to an overnight dusting of snow. Bailey was quite excited about this on his walk to the beach this morning. Needless to say, it's still cold outside so please enjoy some more pictures of our food creations- Yummo!

Pancetta, fresh mozzarella, fresh red chilis & tomato pizza.

Spinach & tortellini soup with peas & parmesan

Our favorite grilled cheese. It takes an hour to make but worth the time and effort. First, roast thin slices of butternut squash basted with cayenne pepper & maple syrup for 20 minutes and caramelize sweet onions with balsamic vinegar for about 40 minutes. Assemble with manchego cheese & grill. We think our bread looks a little like Michigan!

Slow roasted pork, thyme & tallegio cheese pizza. We roasted a 2 pound pork shoulder for 4 hours on Sunday. We plan on making some tacos with the left over pork later this week. Also, our pantry has some Rudy's BBQ sauce in it that pairs quite well with meat.

We made our own "larabar's." We found this recipe on one of our favorite food blogs (userealbutter.com)

Medjool dates (remove the pits & halve), dried cherry's, dried cranberries (we added these to the recipe) and almonds (roasted for 20 minutes at 400 degrees).

After pulsing everything up in the food processor, chill in the fridge for 30 minutes and enjoy! Next time we try this, we are going to add some pistachios, aprocots and maybe granola.
