Eva's Kitchen

Awhile back, Kelly went to a cooking course with friends that highlighted Eva Longoria's new cookbook Eva's Kitchen. To our surprise, the recipes were quick, easy and delicious. Not too long after, we had the Week of Eva- a nightly menu from the cookbook. Here are the results:

Baked goat cheese rigatoni- a recipe from the Palomino restaurant in Dallas. One of Eva's favorites and now one of ours!

Ceviche made with cooked shrimp and crab, avocados, tomatoes, cucumbers, onion, peppers, cilantro. The secret ingredient? Clamato juice. It's delicious!


We served the ceviche with a side of this Vera Cruz corn. It's corn, onion, jalopenas, queso fresco, and tortilla strips. One of the best sellers at Eva's own restaurant, Beso.

Mint lemonade

Crock-pot Cuban ropa vieja- Ropa Vieja translates to "old clothes" and the meat in this Cuban classic is cooked in the slow cooker all day until it just falls apart. This will be a great meal for the winter time!
